Coconut Banana Ice Cream

Never thought I would say this but I’m cutting down on dairy!

I know, it’s a such a tough choice because I love cheese and butter and anything creamy, so it’s gonna be hard. However, I’ve been experiencing bloating and I was told that eliminating dairy (and carbs…err, that’ll have to be later) will help tremendously. So, I don’t know, I’m going to give this a try. I hope this is not just a diet for me (although dropping a few pounds wouldn’t hurt) but a lifestyle choice.

I’ve heard good things about substituting cow’s milk with nut or coconut milk. Have you tried it? I’m particular excited about substituting my ice-cream that are made of coconut milk. There are some really good options out there now on the market, but I did also happen to stumble upon this dairy-free vegan ice-cream recipe that looks as good as the real thing!

Do you have any other suggestions for me on making this transition a little… um, sweeter? If you’re cutting out on diary (or even carbs), I’d love to know what’s working for you.

  • This sounds wonderful Jeanne. You’re right it is a lifestyle choice and change. I’ve also been small changes like ordering almond milk lattes and cutting out carb for dinner. Super duper hard since rest of my family is chowing down on rice and pasta for dinner. I just think about waking up lighter and feeling better!! Would love to hear how things go with this change.
