Ice-cream is a non-seasonal food to me. I can eat it summer or winter. So with the cooler weather approaching, ice-cream will still forever be one of my favorite go-to desserts. However, if you want to get into the spirit of welcoming fall and winter, I thought this toasted marshmallow coconut milk ice-cream would be kind of fitting. And if you’re one of those who’s into making your own ice-cream, I got a great recipe for you.
As for me, I’m more on the “half do-it-yourself” side. Meaning I’ll buy the ice-cream and will toast the marshmallows on the side to add to it. And some time ago, this gluten free expert introduced me to the best tasting dairy free cococut milk vanilla bean ice-cream (can be found at Whole Foods.) Not that I was or am a gluten-free person, but this tasted just as good as any ice-cream I have tasted in the market (maybe even better than some.) So with that said, I’m pretty sure this simple and easy recipe will be on my dessert list to try.
